Meatballs - Kuru Köfte

The mince can be either beef or lamb. The spices can be changed to whichever ones you like. We just use salt and pepper as we don't like anything hot but you can also add chilli powder, chilli flakes and cumin to the mix. You can either cook them under the grill or in the oven. They can also be fried in a pan with a little bit of oil. They can be served with rice, pasta, mash potato. They go well in sandwiches and are great eaten cold from the fridge the day after.
- Ingredients:

- 500g mince
- 2-3 slices of stale bread for breadcrumbs
- 1 onion
- 1 egg
- handful of chopped parsley
- salt
- pepper
- 1-2 cloves of garlic
- Method:

- Grate the onion and crush the garlic.
- Put all the ingredients in a bowl and mix well.
- Knead the mixture for a few minutes.
- Break off pieces from the mince mix and shape them into rectangular flat shapes between the palms. (Or any other shape you want.) Wetting the palms with a bit of water helps at this stage to prevent the balls being too sticky.
- Either grill, cook in the oven or fry in hot oil making sure both sides are cooked..
